This is my go to banana bread recipe, I make a large loaf, or muffins with this recipe. Most recently I have gotten the “perfect petites” silicone sheet from Epicure. AMAZING! I totally recommend buying this little purple baking goodie! It makes the cutest bite sized loaves and each one is so moist. When I make a big loaf the centre piece is always my favourite. That not fully cooked ooey gooey goodness, well with the mini loafs each one is a delicious, ooey gooey bite or perfection! You can also use this for granola bars, cheesecakes, and about any muffin or cake recipe you want!
1/2 Vegetable Oil (I like sunflower oil, or coconut oil (use about half if you are using coconut oil) to be super healthy but it does change the flavour slightly)
3/4 cups white sugar (Sub with coconut sugar)
2 large eggs (Sub with apple Sauce)
3 overripe bananas
2 1/4 cups flour (I use almond flour)
1/2 tsp baking soda
Pinch of salt
Option Chocolate Chips and or chopped walnuts
Mix oil and sugar until fluffy, add eggs and beat well. Add bananas and beat well. Add remaining dry ingredients in 3 steps. Stir in Chocolate chips or nuts. Bake at preheated oven at 350 degrees for 30-35 minutes for bread and 25-30 for muffins.
