I am by no means a chef, but I do enjoy cooking! I just hate the clean up. Thankfully hubby does the dishes most days, I guess he figures I’ll keep cooking, if he keeps cleaning! All the recipes I bring to you here on the blog must fall into a couple categories to be considered a success in my eyes. Firstly it must be kid approved, I am not cooking separate meals, and I am not raising picky kids! They are picky enough as it is, without me catering to it. Our rule is they must try a bite, and they are not allowed to be rude and say thats yucky, or gross. They simply must say that is not my favourite, but most times after the bite they realize that its not poison that I am feeding them, and they actually enjoy it! For those veggies I know won’t get a like I just hide them in sauces, and chili!
Secondly they must be quick, with 3 kids under 4, and a hubby who comes home starving, it is essential that dinner is on the table in and around the 30 minute mark! Lastly, they must be healthy. Or healthy-ish!
So here is a yummy Italian inspired pasta dish. Easy to make and even easier to eat! We didn’t even have left overs with this recipe so I will have to double it next time to have some for lunch the next day!
1 lb lean ground beef
4 cloves of garlic
1 Jar of Classico Sun dried Tomato Alfredo Sauce
1 can of diced tomatoes (I like the aylmers brand “italian”)
2 cups of mushrooms
Penne Pasta – I used the whole box pictured below
3 heaping tbsp’s of Clubhouse Parmesan Herb Seasoning Mix
1/2 tsp of black pepper
1/2 cup of Kraft Italian Salad Dressing
1 Avacado – cut into cubes
Brown ground beef, add Italian salad dressing, garlic, and mushrooms – saute for 5 minutes. Add jar of sauce, spices, and can of tomatoes. Simmer on low for 10 minutes. In the meantime cook the penne in boiling water to al dente. Add penne into the sauce, simmer another minute, add avocado. Serve and top with fresh parmesan cheese. Enjoy!
