I loveeee guacomole! Lets just start with that, its delicious, full of healthy fats, and really good for you! I prefer to make my own so know exactly what is in it and, I don’t really love plain avocado so I like to make a big batch and put it on pretty much everything!
Here is my quick, and easy delicious recipe. I like to chop up all my veggies in a hand chopper before putting it into the food processor. My processor is a small one so having things pre chopped works well for me! Also try and get your ingredients from your local farmers market, everything tastes that much better when you get it from the market! So fresh!
1 Large Tomato
3/4 Cup of red or white onion (I like 1 full cup but I really love onion!)
3 cloves of Garlic
Juice of 1 lime
3/4 cup of chopped cilantro
1 Teaspoon of Pink himalyan salt
Directions: Cube avocado, I like to cut the avocado in half, remove the pit, and then cut into little cubes, it makes it very easy to pop out the avocado. Chop all veggies with a hand chopper (knife works too, it just takes longer) add to food processor, squeeze in lime juice, add salt, hit the button and voila! Don’t forget to keep your pits. I put my guac in a glass pyrex container that has a lid, throw 3 pits in their and it prevents your guac from turning brown!
Dip with your favourite corn chip and enjoy!! I love to eat my guacomole with pico do gallo flavoured beanfields chips. I am trying to choose healthier options, and these have 4 grams of protein and 4 grams of fibre per serving.
